I have to admit… I really like any excuse to eat cookies for breakfast. Who doesn’t? When my mom was young, she’d sometimes make a batch of no-bake cookies to enjoy for breakfast, and I have to say, it’s not a bad idea… after all, oatmeal, peanut butter, they’re a decent start to getting what you need out of the morning. With a few tweaks, I think I’ve perfected that idea… and trust me, these are an incredibly delicious Energy Bite option that tastes just like cookies for breakfast. You don’t even need to turn on your stove or oven.

Start your energy bites with 1 packet of Carnation Breakfast Essentials® Light Start™ (1 packet is enough to make two servings of the recipe, so be sure to enjoy half of the recipe and share the other half, or save it for later, like after your workout or in the pick up line for your kids after school). Ingredients
  1. 1 packet Carnation Breakfast Essentials Light Starts in Milk Chocolate (or any desired flavor)
  2. 3 tablespoons peanut butter
  3. 1 1/2 teaspoons skim milk
  4. 3-4 tablespoons steel cut oats
  5. 2 tablespoons honey
  6. 1 tablespoon chia seeds
Instructions
  1. Mix all ingredients.
  2. Drop mixture by the tablespoonful onto a baking sheet.
  3. Freeze for at least 30 minutes, and transfer any uneaten portions to an airtight container or bag.
Notes
  1. Substitutions may result in a variance from the calorie count, but when made according to this recipe, one serving is under 375 calories.
