They’re so easy to make (you just prep them the night before!) and they taste great in seasonal flavors like pumpkin spice and white chocolate cranberry! They’ll only take you about 5 minutes to toss them together at night, and about 2 minutes to finish up in the morning. It’s totally no-fuss, and that’s the best!

To start on a pumpkin spice mini pie, you’ll first prepare your overnight oats– you’ll need one cup of pumpkin spice yogurt (any of your favorite brands will work just fine), a cup of steel cut oats, a tablespoon of chia seeds, and some walnuts to taste in a jar. Close it and place it in the refrigerator overnight.

Ingredients
  1. 1 Cup yogurt (Pumpkin Spice, vanilla, white chocolate, or your favorite flavor)
  2. 1 Cup steel-cut oats
  3. 1 Tablespoon chia seeds
  4. 3 individual-sized graham cracker crusts
  5. Toppings, to taste (white chocolate, walnuts, cranberries, other nuts and seeds, other fruit)
Instructions
  1. In a mason jar or seal-able container, combine yogurt, oats, chia seeds, and toppings to taste. Stir and cover tightly.
  2. Place jar in fridge overnight.
  3. In the morning, divide mixture between 3 individual graham cracker crusts.
  4. Top with additional toppings and whipped topping if desired.
