There is a horrible misconception going around, and I feel like I have to clear it up with y’all. There are people in this world… I can’t believe I even have to type this out… that think play dates are exclusively for kids. Shhh, don’t tell, but some of us know the real reason play dates exist. To make them, you’ll want to start by cooking your favorite rice. I just use quick white rice, but if you have something you prefer more, go for it. This recipe makes two jars– one for you, and one for your play date bestie. Life is just better shared.

Also, dice two chicken breasts into smaller pieces. Add salt, pepper, garlic powder, and chili powder for seasoning, and cook on the stovetop until they’re done. Set the chicken aside.

Slice bell peppers and an onion, then dice up jalapeno peppers really finely. Cook those in a skillet with a little drizzle of oil.

Once all of your ingredients are cooked, it’s time to start assembling your Fajita Burrito Bowl jars. I like to add some lime juice to my rice for a little pep, and if you like cilantro, you can add that, too!

In the bottom of a jar, layer taco sauce, rice, and your cooked chicken.

Top that with black beans, cheese if you’d like, and your sauteed veggies. Finish off with shredded lettuce, chopped cherry tomatoes, and sour cream or plain Greek yogurt (it’s a better-for-you that is almost exactly the same in flavor!)

Fajita Burrito Bowls Recipe

Fajita Burrito Bowls in a Jar

Ingredients
  1. 2 Cups Rice, Cooked
  2. Juice from ½ lime
  3. 2 chicken breasts, diced
  4. ½ Tbsp garlic powder
  5. 1 tsp salt
  6. ½ tsp pepper
  7. ¼ tsp chili powder
  8. 1 bell pepper, sliced
  9. ½ onion, sliced
  10. ½ jalapeno, diced finely
  11. 2 Tbsp taco sauce
  12. ½ cup black beans
  13. ¼ cup lettuce
  14. Cherry tomatoes
  15. 2 Tbsp sour cream or plain Greek yogurt
Instructions
  1. Cook chicken breasts in seasonings. Set aside.
  2. Saute bell pepper, onion, and jalapeno.
  3. Add lime juice to rice.
  4. Dividing mixtures between two jars, layer taco sauce, rice, chicken, beans, cheese if desired, peppers and onions, lettuce, cherry tomatoes, and Greek yogurt or sour cream.
  5. Place lids on jar and serve immediately at play date with Aquafina Sparkling to drink.
  6. Alternately, refrigerate for up to 24 hours and enjoy chilled.
