I love a good baby shower. I mean, who isn’t a fan of welcoming new life into the world? There’s just so much to celebrate when a new baby is due. So when I found out a blogger I totally love was having a baby, I had to make some special mints to celebrate! These pumpkin spice cream cheese mints are perfect for welcoming autumn babies, but also for any celebration (like a football watch party, a Halloween bash, or Thanksgiving). Plus, they’re so easy to make that you’ll find any excuse to make them. But this time, I’ve made them to celebrate Katie from Clark’s Condensed as she welcomes her new little boy!

So when it comes to making cream cheese mints, it’s CRAZY easy. Which means they’re great for showers (because they taste really awesome, too). And, since they’re customizeable, if you don’t love pumpkin spice, you can easily make them any flavor you want (which is great when mamas-to-be have certain flavor cravings, y’know?)

To start out, you’ll need one block of cream cheese, and a tablespoon of butter, both softened.

To that, add 2 pounds of powdered sugar. While weight doesn’t perfectly convert, you could get away with using roughly 7 1/2 cups here instead for the same texture.

I start mine with the mixer, then use my hands to finish off. If you have a powerful stand mixer, you may be able to get away with doing it entirely by mixer.

Flatten out the mint ball, then drizzle it with 1/4 teaspoon pumpkin spice extract. Of course, you can substitute any extract flavoring you like– mint, cherry, banana, almond… they all work! You can flavor it for the season or the event, or, of course, the mother-to-be’s personal tastes.

Drip some food coloring onto the mint dough, also. There’s no set amount here– just knead the color in and see if you like how it looks, or if you want to add a few more drops. The more you work this dough, the softer and more pliable it gets, so you can keep adding as needed.

You can theme the color to the shower’s colors and theme, or choose a color that matches the flavor. Alternately, if you’re using these for a Halloween party, Thanksgiving, or a sporting event, just make them in team or seasonal colors! The great thing is they’re so versatile. Pinch off small portions and roll each into a ball.

Roll each ball in granulated sugar, making sure to coat it evenly.

From here, you can either press your mints gently into a mold, or lightly flatten them with a fork. I find the fork method goes a little bit faster, but creative molds make a really cute addition to fit the theme!

These are the same mints that I served at my baby shower when I had my baby boy 4 years ago. That’s why I knew they were the perfect way to celebrate Katie’s second baby boy! Ingredients
  1. 1 Block (8 oz) cream cheese, softened
  2. 1 Tbsp butter, softened
  3. 2 lbs powdered sugar
  4. 1/4 tsp pumpkin spice extract
  5. Granulated sugar for rolling
Instructions
  1. Mix together cream cheese, butter, and powdered sugar until a thick dough forms.
  2. Flatten dough ball and add extract and color to preference, then knead it throughout.
  3. Pinch off small portions of dough, then roll into balls.
  4. Roll balls into granulated sugar, then flatten with fork tines or press into a shaped mold.
Notes
  1. Instead of pumpkin spice, you can replace it with any other flavored extract. Try almond or mint!

      They definitely last awhile, especially if frozen or refrigerated, so a batch is pretty quick to whip up and have around.
