It’s no secret that IHOP is one of our favorite restaurants. The kiddo and I usually end up stopping there after his Autism therapy, or going for a late breakfast once in awhile as a fun treat. We’re such big fans, we even asked for IHOP gift cards for Christmas to fuel our little IHOP addiction. It’s also no secret that I am a huuuuge fan of their double-dipped French toast! I love the extra crunch that it has, the taste that takes it one step higher than regular French toast for me. The only downside? Double Dipped French Toast is seasonal on their menu, and I’ve found myself craving it like nobody’s business. I’ve been determined to make it at home so I can eat it whenever I want, and I think I’ve finally got the recipe down, so I’m going to show you how to make it a big platter (and then tell you how to scale down the recipe if it’s only you eating breakfast).

To start, you’re going to mix 2 parts crushed corn flake cereal, 1 part steel cut oatmeal, and 1 part sugar. Add in a little bit of cinnamon to taste and set this aside. If you’re planning to make 2 slices (4 triangles) of toast, your recipe would be roughly 1/2 cup crushed corn flake cereal, 1/4 cup oatmeal, and 1/4 cup sugar with a generous sprinkle of cinnamon. Multiply that by however much you want to make, and you’ve got a good recipe to work from.

In a separate bowl, mix 1 beaten egg with 1/4 cup of milk for every 2 slices (4 triangles) you plan to make.

Toast your bread (I know, sounds crazy, but toast makes for a crunchier, crispier French toast and means the bread won’t get soggy when dipped in the egg mixture) while you warm a pan on the stove to medium heat. Dip the slice in the egg mixture, turning it to thoroughly coat each side.

Then, place it in the corn flake cereal mixture, coating each side. Melt butter in the pan, then place the coated toast on the pan. Cook for 2-3 minutes on each side, until the toast starts to get golden, flip, and once you’ve cooked both sides, remove from the pan and cut into triangles.
