Tailgating season is now in full swing, and I have to admit, I’m really excited. You see, here in Kansas City tailgating generally means barbecue, and y’all know how much I love barbecue. But one recipe that’s been a recent favorite when I tailgate is this: sausage and beef, blended together and stuffed with cheese, coated in barbecue sauce, and cooked in the slow cooker until they’re ready to enjoy. I can’t imagine a tailgate without them. Made with spicy sausage, they’re even worth the heartburn (which, luckily, I have a solution for).

These meat bombs really don’t have any complicated ingredients inside, so you can pick up everything you need at your local Walmart store. You’ll need a pound of ground beef, a pound of ground sausage, some barbecue sauce, some breadcrumbs, an egg, and of course, some cheese.

On the day of your tailgate, you can whip these up in the morning in literally less than 15 minutes. Simply mix the ground sausage, ground beef, an egg, and some breadcrumbs together until it’s just mixed (but be careful not to overwork it). Pick your own favorite– spicy, mild, whatever.

In the bottom of your slow cooker, spread a thin layer of barbecue sauce. I’m from Kansas City, so I like my sauce a little sweeter, but you can go sweet, spicy, or anything in between.

Flatten out a bit of the meat, just a little bit smaller than your palm when flattened, and place a 1-inch cube of cheddar cheese in the middle (or kick it up a notch with some pepper jack or any cheese you like). Wrap the meat around the cheese until it’s fully covered and place the meatball in the slow cooker, adding a little more barbecue sauce between each layer of balls until you’re out of meat mixture.

Cover and cook on low for 7-8 hours for an evening tailgate or on high 3-4 hours for an early afternoon tailgate.

Ingredients
  1. 1 lb ground beef
  2. 1 lb ground sausage
  3. 1 cup breadcrumbs
  4. 1 lb cheddar cheese, cut into 1" cubes
  5. 1 egg
  6. Barbecue Sauce
  7. Buns, to serve
Instructions
  1. Combine beef, sausage, breadcrumbs, and egg until just combined, being careful not to overmix.
  2. Take meatball-sized portions of meat mixture, flatten, place cheese in the middle, and wrap meat around cheese to cover cheese completely.
  3. Spread layer of barbecue sauce in the bottom of the slow cooker, and layer meatballs with barbecue sauce.
  4. Cook 7-8 hours on low or 3-4 hours on high and serve on buns.

For me, tailgating season is seriously about celebrating Tailgreatness, whether that means a heartburn-free tailgate or a super delicious, ooey-gooey, cheese stuffed barbecue meat bomb that all of my friends and family love.     1. There are definitely some calories, so it’s a good “sometimes” treat! (But there are some ways to lighten it up– feel free to swap ground turkey for some or all of the beef and sausage, change the cheese to a lower calorie option, and make or use a sauce that has a lower calorie count, as well! Enjoy! 🙂
